Point politely to the inside of the skewed meat using your chopsticks, or show the piece to the staff.

Do not rudely complain or accuse them of serving raw food. In Japan, high-quality chicken (like Yakitori) is sometimes served medium-rare intentionally. Politely ask to cook it more if you feel uncomfortable.
