Gesture & etiquette
When explaining kaiseki, use your hands to suggest a progression from left to right — each course is distinct and arrives in order. Never rush or ask to skip a course. If you're full, it's acceptable to leave a small amount on your plate.
懐石 (kaiseki) is Japan's highest form of traditional multi-course cuisine, typically served at ryokan or high-end Japanese restaurants. The sequence reflects seasonal ingredients and balance across preparation methods. Pacing is slow and deliberate — eating too quickly is considered disrespectful to the chef's craft.
