Gesture & etiquette

Hold chopsticks about two-thirds of the way down; keep one stick stationary and move the other; rest chopsticks on the hashi oki (chopstick rest) when not using them; never stick them upright in rice (funeral association); never spear food.

Key chopstick taboos: (1) hashi-watashi — passing food chopstick-to-chopstick (resembles funeral bone-passing); (2) tate-bashi — standing chopsticks upright in rice (resembles funeral incense); (3) sashi-bashi — spearing food; (4) neburi-bashi — licking chopsticks; knowing these shows genuine cultural awareness.
