Gesture & etiquette
When the staff brings the small kettle, lift the lid to see the warm milky water. Pour about half into your remaining sauce cup. Stir gently with chopsticks. Drink slowly from the cup using both hands. A satisfied 「ごちそうさま」 at the end honors the meal.
「蕎麦湯」 (sobayu) is the milky water in which soba noodles were boiled, served in a small kettle after the meal. Pour it into the remaining 「つゆ」 (dipping sauce) to thin it, then drink. Rich in soba nutrients (rutin, B vitamins). Specifically associated with Edo-style 「ざる蕎麦」 and 「もり蕎麦」 (cold soba). Not served with hot soba.
