Gesture & etiquette
Sit at counter, hands placed on lap or counter (not in pockets). Make eye contact with chef when ordering. Eat each piece in one bite (do not bite in half). Use ginger between pieces, not on top. Show appreciation: 「美味しいです」 or non-verbal smile/nod at chef.
「お任せ」 means 'I leave it to you'—you trust the chef to select the day's best pieces. State allergies/dislikes upfront ('苦手なものは...' even if 'none', it acknowledges the question). The chef sets pace; do not order specific pieces in the middle. Eat each piece in one bite. Use fingers or chopsticks—both acceptable.
